After 3 Year Hotel apprenticeship with Southern Sun Hotels, Craig was invited to cook for Queen Elizabeth II at a gala banquet during the Commonwealth Heads of State meeting in Zimbabwe - 1991.
He then worked as Chef de Partie at Victoria and Alfred Hotel, before traveling abroad and working for six months at the Millerhowe Hotel under Master Chef Sir John Tovey.
Craig returned to South Africa working at 5 star properties, for the likes of, The Bay Hotel, Ellerman House, the very exclusive Boutique Hotel that has counted amongst their very famous clientele the late Princess Diana and legends of the music and film industry.

He also did a stint in countries like, Greece on the Island of Santorini for the summer season and then returned to South Africa. I then and took a position as Head Chef at Ellerman House, which was rated No.1 in Africa and No. 13 in the world (purple star rating) during the year he spent there.

In 2002, Craig took up the position of Executive Chef at the Cape Grace Hotel, which in the 2 years he was there was rated Best Hotel in the World. A As a committee member of the Chaine de Rottiseurs, and as chairman of the South African Chefs Association for the Western Cape he attended a food promotion with Cape Malay food in Bodrum, Turkey and a food promotion in Mauritius Food Promotion at The Veranda Hotel in Grande Baie.

The next step was to open a creative catering company with Bertus Basson called Chefs on the move. Since then they have opened 3 more restaurants, Overture, Genot and Cafe Misto.
